We spoke to owner Svende Reeskamp about doing business at this unique place and how they consciously deal with sustainability in their daily operations.
The most beautiful place in Groningen
For the owner of restaurant Zondag, the Noorderplantsoen has always been a special place. “We really thought this was the most beautiful place in the city,” she says. “If we could do something here, that would be great.” So when the opportunity arose to do business at this location, she grabbed it with both hands.
To her, the park is the perfect location for restaurant Sunday. It's a place where everyone comes together - from hikers and athletes to families and students. “It's really nice to be able to do business in such a special place,” she says.
Sustainable business in practice
Sustainability is not an afterthought for restaurant Zondag, but an integral part of their business operations. You can see this clearly in their choice of sustainable disposables, for example. This is where our collaboration comes in, as their kraft French fry trays, cardboard coffee cups and paper straws come from our range. “It's nice to work with suppliers who exude sustainability,” she says.
The new regulations surrounding disposables
Sustainability is becoming increasingly important in the hospitality industry, and new regulations around disposables also play a big role in this. Owner Svende has mixed feelings about how these regulations have been placed on business owners. Still, she acknowledges the need for action. “People are now becoming more aware of the impact of their choices,” she explains. Restaurant Sunday is trying to further encourage this awareness, for example by offering a discount if guests bring their own cup.
Yet Svende notices that most orders are still taken in disposable cups. To make a sustainable choice here as well, she consciously chooses products that convey a sustainable image, such as kraft cups and cardboard packaging. “It's important that what you take away presents a good image. Plastic we avoid as much as possible, because guests have an opinion on that too,” she says.
